• Delicious Vegetable Stir Fry

I particularly go crazy for this vegetable stir fry that I’ve tried lately and it’s not like any ordinary stir fried vegetable you would try! What’s best about it is it’s high in fiber content while it’s rich flavor comes from the natural ingredients—garlic, ginger, onion, etc—and not from the seasonings. I bet you want to try this too, so here’s the recipe:

Ingredients
1 tbsp canola oil
2 cloves garlic, chopped
2 tbsp ginger, (minced or grated)
3 green shallots, sliced
350g cut broccoli
300g sliced mushrooms
2 large red and yellow capsicum, stripped thin
2 tbsp Thai sweet chili sauce
2 tbsp soy sauce
1 1/2 tablespoons honey
1 tsp toasted sesame oil
Rice

Method
Cook the rice and set aside.

In one large frying pan or wok, heat the cooking oil on medium heat.  Sautee the garlic, ginger, and scallions, and stir for up to 3 minutes or until it releases an aroma. Add the broccoli, mushrooms, and peppers. Stir for another 7 minutes or wait until the vegetables turns tender and bright, just don’t overcook it.

In a small bowl, make a mixture of Thai sweet chili sauce, soy sauce, honey, and sesame oil. Make sure to come up with a desirable blend before you and mix it with the vegetables. Stir for one more minute to combine. Serve on top of the rice and sprinkle with sesame seed or fried garlic for a more sumptuous look.
